This roasted beet salad with greens is exactly what I’m craving right now. It’s hearty, fresh and spring-y, which is perfect as the weather turns from downright arctic to patio-worthy. Cookie and I couldn’t be more excited about the warmer temperatures and sunnier days! I bet you can relate.

This salad was inspired by the beet salads at my favorite local French restaurants, Westport Café and French Market. Over the past year, I’ve really missed sipping wine in their establishments and soaking up their vibes. You should know that I’m constantly daydreaming of a French vacation.

Both restaurants offer beet salads with pistachios and goat cheese, yet they each have their own unique spin on the combination. I always order the beet salad and French fries, naturally!

This recipe incorporates my go-to method for roasting beets, which yields amazing flavor. I used arugula as the base, which contrasts nicely with the earthy flavor of the beets.

Then I added goat cheese and pistachios, plus some radish and green onion for extra freshness and some crunch. The zippy, Dijon-forward vinaigrette brings it all together. Serve this salad as a side dish or enjoy a large portion for a satisfying but light dinner.

These roasted beets are for everyone! If you already love beetroots, I think you’ll be a big fan of this foil-free, no-peeling-required roasted beet recipe. If you don’t enjoy beets (yet), this roasting method just might change your mind.

These roasted beets feature lightly caramelized, tender-but-not-quite-crisp exteriors and deep, condensed flavor. I don’t love beets in all applications, but these? I have to stop myself from devouring the whole pan before dinner.

With this method, simply scrub the beets well before baking. No need to peel before or after baking. The skin, which is perfectly edible, just seems to disappear during the baking process.

The trick to pan-roasted beets is to drop the temperature a bit. I always roast potatoes, Brussels sprouts, carrots, and pretty much all the other veggies at 425 degrees Fahrenheit.

For beets, since we don’t want crispy outsides (tender is nicer), we’ll roast at 375 degrees. Easy!

Would you look at those colors?! This roasted beet side dish is the prettiest recipe I’ve made in a long time, and the leftovers look like an abstract Easter basket.

This recipe comes from a new cookbook called Eat What You Want by Gaby Dalkin. You may know Gaby from her blog, What’s Gaby Cooking. I love Gaby’s fresh, California-style cooking and boundless enthusiasm for all things food-related!

The funny thing is that I’ve never met Gaby in person, but I feel like I know her after watching her on Instagram over the years. We share an affinity for fresh herbs and flaky sea salt, and I turn to her blog and cookbook for inspiration often. When she offered to send me a copy of her cookbook, I said yes, of course.

Her newest book features “125 recipes for real life” and I had a hard time choosing just one to share with you. I’ve been on a beet kick lately, so beets won the draw. This recipe also gave me an excuse to make Gaby’s go-to basil vinaigrette, which I’ve been meaning to try for ages.

This dish features roasted beets over thick yogurt (I used Siggi’s “skyr” instead of labneh), with fresh basil vinaigrette, avocado wedges, and a heavy sprinkling of fresh herbs. Even my husband, who’s not a fan of beets, went back for more.

Raw Beet Salad with Carrot, Quinoa & Spinach in bowls

Yesterday was not my day. I stayed up too late the night before (will I ever learn?). I ate lasagna for breakfast, forgot several important items on my grocery list, and fell over in yoga class. More than once. Maybe it was a normal day after all.

I managed to piece together this mega colorful beet salad with ingredients from the store and some substitutions based on what I had at home.

It’s a meal-in-a-bowl version of my simple beet and arugula salad that helped me find some much-needed balance during my totally ungraceful day. The recipe comes from a brand new cookbook called Inspiralized, by my friend Ali Maffucci.

I knew I liked Hilary Brown when she offered me a bowl of homemade soup shortly after arriving at her office. They have a weekly tradition of making soup in a slow cooker on Fridays for lunch. The topic of bean soup quickly turned into a conversation about digestion that made me giggle. We opened a door just past the office kitchen and donned white coats and hairnets to see how they make veggie burgers at Hilary’s Eat Well.

First, I saw freshly cooked millet in vessels at least thirty times bigger than the largest pot in my kitchen. As a person who’s accustomed to cooking for one, it’s always an eye-opening experience to see food prepared for many. Their facility had a homey feel to it, though, thanks to the clear winter light streaming through a giant window and fragrant spices in the air. Hilary talked about how much their production has grown over the past few years and mentioned plans for expansion.

I saw the machine where they mix millet with beans, greens and spices and watched fresh veggie patties go plop-plop-plop onto a belt. The burgers continued down the belt’s short course: flash frozen, then wrapped up two at a time in Hilary’s cute branded bags, which carry 70 percent less of a carbon footprint than four-packs of veggie burgers in cardboard boxes. Lastly, they’re packed up and transferred to the freezer for temporary safekeeping. Whole Foods Market is their biggest customer.
