Don’t do it!!! It actually makes the potatoes more mushy and not crispy. I always wash, dry, cut, cover with oil then bake. That works much better

I got caught up preparing dinner and accidentally soaked it for 30 mins. Even though I dried the wedges with a paper towel as best as I could, the bake time was almost 60 mins at 400f. Everything came out amazing though,
