Absolutely perfect! I made a similar variation in the past with ricotta and cream cheese for Greek Orthodox Easter. Just tried this instead this year and it was amazing! Probably the best cheese cake I ever had. My other one used to be at the top of the list, but your version is even better. Instructions are great too.

Made this cheesecake last weekend and it was a huge hit with my husband. He says it reminds him a lot of his mom’s German cheesecake recipe. It is so simple and yet so delicious I couldn’t wait for it to cool down to try it! Thanks for perfecting it for us.

Is this tasting rather like a caramel flan, soufflé type of thing? Im afraid to try it especially because I don’t like flans/soufflés at all..
